This year, Smart had the opportunity to work with the Ancora team to design a second location for the Peruvian & Japanese fusion seafood restaurant in the new Grosvenor West Vancouver development.
With the Ambleside waterfront location, maintaining views to the ocean was as important to the customer experience as was creating an inviting, modern and upscale dining environment.
Some of the project challenges included:
- The scale of the restaurant, the Smart in house Food Service team had to incorporate a large amount of wine storage and various cooking components within a relatively condense store.
- The large open space with expansive exterior glazing created issues with acoustics that needed to be addressed.
- Structurally, the building envelope and high-end residential suites above also posed as challenges due to extensive non-penetrable structural beams below the unit and the inability to exhaust kitchen smells directly out of the restaurant, towards the residential balconies.
