Pacific Farms Market Lands at Vancouver International Airport

Pacific Farms Market brings together the best of West Coast food and drink in a contemporary and localized environment.

After two years of COVID shutdowns and supply chain issues, Pacific Farms Market at Vancouver International Airport is open alas and excited to serve guests local and sustainable, quality food and drink. Partnering with Tastes on the Fly, a San-Francisco-based boutique airport operator, Smart was tasked with designing the new restaurant and marketplace in Concourse C.

Based on the widely popular Napa Farms Market at San Francisco International Airport, Pacific Farms Market offers service from breakfast through dinner, serving up fresh grab-n-go items like live fire pizza, sushi, and paninis. Guests can choose from items like the Haida Gwaii Smoked Salmon Bagel, Okanagan Fruit Parfait, Fraser Valley Rotisserie Chicken BLT, or Commercial Drive Butcher Block Pizza. The marketplace celebrates local with Vancouverite favourite vendors including Whistler’s Purebread bakery, Rosemary Rocksalt bagels and sustainably sourced coffee from 49th Parallel Coffee Roasters. All beer and wine are produced both in the lower mainland and across British Columbia. A wine bottle feature showcases offerings from Okanagan wineries like Kalala, Volcanic Hills, Lang, and Bordertown. Craft Beers are offered from Old Yale, Fuggles & Warlock, Yellow Dog, Fieldhouse, and Five Roads.

Pacific Farms Market is located between the main Concourse at North side and the gates at the South side, served by a circulation crossing through the space.  The outcome of various layout challenges resulted in a large, open-space market area on the North side to support operations, display counters, payment stations, as well as a feature bar with eating counters. To the South, a seating area with full-height windows is defined by an oversized, arch-shaped banquette and features a variety of sitting arrangements, punctuated by large planters with live vegetation.

One can sit here or at the bar, relax and catch a game or look out onto the tarmac. Throughout the space there are gondolas where those in a rush can find local and convenient snacks and souvenirs. iPads throughout the space educate visitors on market offerings and local suppliers.

Inspired by the west Coast and tying into the Pacific Farms Market esthetic, the contemporary design utilizes wood, tile, metal, stone, and natural plants in a modern, sustainable fashion, expressed in a luminous color palette where white, sand and wood colors are contrasted by blue accents – a hint at the local landscape. This west coast vibe fits seamlessly with the base building design elements found in the new YVR international terminal, utilizing locally sourced materials and evoking a sense of the ‘spirit of the sea’.

All the lighting is energy saving LED, and together with accent lighting aims to create zones of interest throughout the space. Eye catching copper pendants highlight the bar, a communal table, or an eating counter, while downlights mounted at a low metal canopy bring attention to the lower, accessible eating counter below.

Seamlessly integrated signage announces the Pacific Farms Market presence at the main concourse, and various graphics bring further clarity and interest to the space.

Smart is excited to work on a second Pacific Farms Market location in the International Terminal Concourse D coming soon. Stay tuned for more information.
